Molcajetes can also be used in extreme temperatures (they are carved from lava!). A popular Yucatan dish is to heat molcajete to 500° or higher, then slice and quickly cook sliced onions, shrimp, cilantro, and fresh tomatoes. Add cheddar cheese cubes and bake until melted. Remove and stir. Serve with nachos or hot tortillas. You're welcome! I will be including this recipe, the guacamole recipe and the street corn dip recipe!
Real molcajetes are very heavy. Our sizes are 8-9" diameter and approximately 5-6" tall. The tejolote (tay-ho-low-tay - the stick-like part) is about 3 inches long. Each set weighs about 9-11 pounds.
